The reason for the chocolatiers choosing the use of a tempering machine instead of doing tempering by hand is that manual tempering is very difficult. Another reason is if the chocolate is tempered with the tempering machine, the chocolate remains tempered for more time, even all night.

But even now, artisanal chocolatiers refuse to be tempted by tempering machines and stick only to tempering by hand, using tabliering, because they know manually-made chocolates do attract a huge segment of chocolate lovers. Tabliering hails from France and in this method melted chocolate is cooled on a heat-absorbing plane like a marble slab.

Moisture is an enemy to tabliering. All the equipment and the surfaces for doing tabliering must be kept dry. Even one or two drops of moisture may cause “seizing”, due to which the chocolate will become a hard lump and you won’t be able to design or create with it. Seizing may result even if you do rapid heating as well as freezing.

For tabliering, you’ll need a pound of chocolate as base and cooking gear like a knife, chopping board, spatula, mixing bowl, a double boiler and a thermometer capable of measuring even low temperatures like 82F and a cookie sheet. Note that all these must be moisture-free.

Cut the chocolate into thin ribbons, placing these on the upper pan of the double boiler. Use the lower pan to boil water on low heat. Regularly stir the chocolate ’til it melts to 108-115F, depending upon the type of chocolate. The molten chocolate, otherwise called the mush, is poured into a dry mixing bowl; watch that it pours cleanly without being lumpy.

Spread, scrape and work two-thirds of the melt on a marble slab with the spatula, until heat has lowered to about 80-82F. The remaining mush in the bowl should not harden and should retain a 100F temperature.

After the cooling temperature is attained, integrate the remaining one-third of the chocolate into the mixed mush and work as before ’til the whole mush reaches cooling levels. Dark chocolates must then be reheated to 86 to 90F; semi-sweet chocolates to 86 to 88F; and white chocolates to 82 to 84F. To check if ideal tempers have been reached, dip the end of the spatula into the chocolate and let air for 5 minutes. If you observe that the chocolate has hardened and become shiny, then it has tempered well. You can now dip, sculpt, mold or design after this.

But during the whole process of tabliering and while working, you must monitor and maintain the specific temperatures because otherwise, chocolate will lose temper and you’ll need to re-temper it. You can set the mush on a bain-marie for some time, ensuring that there is no moisture.

How to Use Your Dry Rub

A dry rub is a versatile combination of spices that extends beyond the boundaries of barbecue, and can be used to season any dish where you want to add a kick of flavor. In addition to the usual method of rubbing it into meats, a dry rub can be used to add new and unusual flavors to vegetables, salads, casseroles, and can even be used to spice up condiments such as mayonnaise for that steak sandwich!

Rubs can be used completely dry or they can be incorporated into a liquid, usually an oil of some sort, but they are frequently combined with other “secret” purees and liquids, providing an additional dose of flavor as well. In these cases, it is referred to as a wet rub or paste. We prefer to use a wet rub with an oil base as a coating for vegetables or shellfish prior to grilling or roasting, as the oil helps the spices adhere better to these foods and aids in the roasting process. We also mix our rubs with mustard and horseradish and use this paste to thoroughly coat our briskets prior to their long slow smoking.

When using rubs in recipes that require an extended cooking time in liquids, such as in a crock pot or batch of chili, it is best to add the dry rub or Texas chili seasoning required in small batches throughout, or towards the end of the cooking process. This keeps the spice flavors at their peak and will provide a more flavorful end product.

When used as a rub for meats, the process is quite simple and adds a tremendous amount of flavor to the finished product.

Step 1:

Wash the meat, and trim it of any excess fat, silver-skin, etc. Dry the meat thoroughly with a paper towel, discarding paper towel when finished.

Step 2:

Generously sprinkle the dry rub, or spread your wet rub paste, to cover your meat of choice with a thorough layer of the spices. With chicken and other birds, gently lift the skin without tearing it, making sure to get the rub in direct contact with the meat as well as on top of the skin and thoroughly within the cavity, to add even more flavor to your finished bird.

When done your meat should be coated with a nice even layer of rub or paste.

Step 3:
(Optional - especially with fish and delicate foods)

Using your fingers, gently work the rub in a circular motion, being careful not to crush the meat. On heartier cuts such as brisket or pork shoulder, use the palm of your hand to work the rub into the meat, giving it a good exercise; this helps break down the connective tissues of these tougher cuts.

Step 4:

If you performed step 3, apply additional rub to evenly coat the meat.

Thoroughly wrap the meat in plastic wrap, and place in the refrigerator if cooking at a later time, or leave wrapped at room temperature if cooking time is less than 1 hour away. Do not leave your meat un-refrigerated for an extended period of time as this may result in the meat becoming unsafe to eat.

It is not necessary to let the meat sit for several hours after applying the dry rub. However, if you do have the time, allow the rub to really penetrate into the meat and increase the flavor level by letting it have at least one hour of resting time prior to cooking. For even greater results, let the seasoned meat sit in the refrigerator overnight, wrapped in plastic wrap.

Step 5:

About a half-hour before cooking the meat, remove it from the refrigerator, take off the plastic wrap and allow to return to room temperature. If a dry rub was used, it will have become pasty from the juices of the meat. Be careful when handling the meat, so as to avoid rubbing away any of the paste - it makes for a tasty crust, or what is referred to as “bark”.

If desired, you can add more rub to coat for even more flavor.

Many adults with ADD have a hard time slowing down their brains. Thoughts often come at whirlwind speed, and it can be hard to concentrate on the tasks at hand when so many other thoughts are floating around in the brain. I call this “mental clutter.”

Often times, mental clutter is made up of worries and bad feelings. (Very few people get overwhelmed by the amount of positive thoughts in their heads!) Regrets of the past and worries about the future can easily overshadow the present moment. Self-doubt can also take up a lot of space in the mind. When an excess of these types of thoughts take over in the brain, it can be stressful, upsetting, and sometimes even paralyzing.

The best way to clear this mental clutter is to process the thoughts, rather than letting them swim around in your brain. Doing so will allow you to focus on the present moment, and feel more calm and centered.

The following 3 methods have proven very helpful in clearing mental clutter.

1. Write

A great way to clear mental clutter is to transfer the thoughts from your brain onto paper. This can be in the form of a to-do list, an email to a supportive person in your life, or a journal entry. When the thoughts are recorded, there is no need for your brain to hold on to them.

Additionally, if you feel weighed down by a situation (like an argument with a family member) writing about it can help you process your feelings. You can get a better grip on the events, how you feel, and what you might have done differently. A page or two might be all it takes.

2. Talk

Many people with ADD are “verbal processors.” This means that we often work through thoughts and feelings by talking them out. It helps to have an objective person to talk to, who can mirror your thoughts and talk them out with you. However, the very act of talking is often what does the trick, so having someone to talk to isn’t always necessary. Many people find that talking into a tape recorder suits their needs. Others talk to plants or animals. (I talk to my dog so much that I’m surprised she doesn’t talk back by now!)

3. Move

Some ADDers can clear mental clutter by moving. Something as simple as a 10-minute walk can give the brain a needed jolt. Others may find that they feel free of extraneous thoughts after a visit to the gym. The time alone combined with the physical activity proves to be a successful formula for some ADDers to work through their mental clutter.

It’s best to experiment with the different methods and see which work best for you in the different areas of your life. The important thing to know is that with a little time-out, mental clutter can be cleared!

Imagine finally taking off seven coats youve been wearing on top of each other for years and years. You’ve forgotten that some people consciously choose to live without seven layers of coats on even though most people are living that way.

You remember the possibilities you imagined your life would be when you were a child. You decide to take off the coats and start running joyfully through the spring fields you forgot about. You move into the light where you finally begin to laugh and live feeling inspired every day instead of simply walking around reacting to life, complaining, counting down the days to the next weekend or vacation until you finally die.

Start taking off the coats that have layered your soul since you started to grow up. Forget about the negativity of the news. Dont believe negative people telling you that you cant make more money or move to a nicer city or do anything to better your life. Ignore all the forces telling you what you cant do. Close your ears to people who blame their boss, the government, their friends, and their circumstances for what they dont like about their lives.

Its time to leave em all behind and say See ya! Its time to adopt a new Belief System (yeah, whatever we believe is simply B.S. just opinions we made up that may or may not actually be true.) Its time to drop all that limited thinking that keeps you stuck on the birth-school-work(paycheck-to-paycheck)-death merrygo-round.

Its time to learn the magic of saying YES. Im going to make YES your new favorite word. Imagine what you want most in life right now. Dream BIG. Think of what your ideal life would look like. See all the tiny details. You have no limitations. You can have exactly what you want.

Money is no object. Your time is your own to spend as you like for as long as you wish. Dream BIGGER now. What fills your soul with more joy than youve ever felt before? Remember the best experience of your life? Start there and make it as amazing as you can.

How are you spending your days and nights? Who are you with? What are you doing? What emotions are coming up? What smells are in the air? What are your favorite foods that youre eating and tasting? What cities and countries are you visiting? What are you wearing?

As you reach out to touch your loved ones youre sharing this life with what sensations run through your hands? Get as specific as possible. The more specific you are the more youll get out of doing this. I want you to see, hear, feel, taste and smell every little piece of the life you were born to live.

As you walk into your dream house how big are the doors? How high are the walls? How much of the square footage is covered in windows? How have you furnished it? How many rooms does it have? How many rooms does your guest house have? How many acres of property do you own? What do you see outside of the windows? A meadow? A stream? The ocean? The sunset?

Is this the most fantastic day of your life? YES, it is. Get more in depth. See how your smile looks. Feel the warmth in your heart and the ease and peace in your spirit. Hear the sounds of the surroundings that feed your soul. Feel the excitement in your bones as you realize that you are actually living in your dream come true.

How amazing do you feel right now? You deserve this life dont you? YES, you do.This is no accident. If you are in a human body then you deserve to use it to build the life you truly want to be living. Hundreds of thousands of people are doing it right now. Cant you do it too? YES, you can. You may need some help, guidance and support, but you can and you will create the life of your dreams. YES, its yours for the taking.

YES, youre ready. YES, you will live it now. How do you feel right now? YES, right now at this moment. Imagine feeling this light and warm every day. Youre smiling arent you? If you arent then you didnt do the exercise above slow enough to absorb it and I invite you to do it again.

Feeling is what creates what we have and do. Positive thinking without honest feeling behind it will leave you wondering why nothing’s changed.

When you learn to consciously create with your feelings you’ll start getting better results in your life. Right now you’re probably getting results based on your unconscious feelings. The scary part of this is that most people only feel in reaction to wht happens to them. I’m teaching you how to create with your feelings instead.
